Maybe their food has changed over the 30+ years, but I've never seen any gravy, aside from the brothy Au Jus that comes on the side of the French Dip. Also, I am not very tolerant of a salty taste, and I don't notice the beef tasting overly salty, though I figure the sodium content is quite high, as is the case with most fast food. But as far as fast food goes, I like Arby's plain medium roast beef and French Dip sandwiches. I do hate that faux cheese sauce that is featured on the Beef & Cheddar, though. Yuck!
