 Since Visitor from NC, he/she may be used to vinegar sauced BBQ, these above will be similar. Slaw will be different for your visitor.  Sauce/spray added to meat seems to be Vinegar based. Some of Carolina's use mustard/vinegar sauce to bast meat while cooking. No Mustard based BBQ used in this area that I know of. 

 

As far as Kansas City goes, Not a big fan of KC Pork BBQ, they use a lot of Oak to smoke pork and local favorite sauce is far too sweet. I might as well use a bottle of KC Master piece. Too much Tomato based Thickness & Sweetness for my liking.  But none the less, it's still Good Meat Flavor & texture! That's why its so much fun trying BBQ in different parts of the Country. They are all a little bit different. In my travels across the country, the South East has the best BBQ in the Country, Minus Dobbs in Dothan,Al. Ranging from the Carolina's to Texas an all points in between. The Farther north you go, the more of an attempt, to make Good BBQ. North East, Good BBQ is Non-Existence. 

 Regional BBQ is Just that, "Regional"!!! Just Like Whitts, They add a Pickle slice to their BBQ Sandwich and I believe that presentation only exist in North Alabama, no where else.
