It's actually at the Eucharistic Prayer, the priest calls the Holy Spirit, and transubstantiation occurs. THAT is why we kneel- not to pray to statues, as certain people have said, but out of respect for the presence of Jesus in the Eucharist.
And you're right- 1.2 Billion people believe it, worldwide.
