I am bored with everything I cook. Please share a recipe that your family loves and is easy to prepare on a weeknight.
I cook chili a lot this time of the year.
This is a very easy recipe.

Chili
Hamburger meat fried and drained
1 can rotel
15 ounces or so of veg juice(v8)
2 cans of kidney beans
1/2 pkg of chili seasoning
salt and pepper
sprinkle of cumin, and garlic, onion(opt)
Throw together and let simmer for about 30 min till flavor blends.
serve with corn chis, sour cream, cheese.

To save time I pre-fry my hamburger meat and freeze it so it is always ready.

If you do the crock pot thing. . . I fix boneless pork chops in the crock pot. I salt and pepper the chops then brown them in a skillet, just put them in the crock pot and add a can of golden cream of mushroom soup (diluted with water) and cook on low during the day, then with a potato (baked or mashed), a green vegetable or salad, you have your meal. For those who like onions, I have also fixed it using cream of onion soup instead of the mushroom soup then sauted onions while the other veggies are cooking to serve on top of the chop which has been a favorite as well. Of course, you will want to salt and pepper to taste, versions lower in fat can be done using the reduced fat mushroom soup, etc. If you try it, hope you like it! Wink
Easy Chicken Casserole
* 2 boneless skinless chicken breasts chopped into small chunks or (if you are in a hurry, like I normally am) you can use three cans of Tyson Chunked Chicken breasts
*1 can of cream of chicken
*1 bag of Lipton rice (I ususally use the chicken broccoli flavor)
*1 cup of mayonaisse
*1 small bag of frozen broccoli

Preheat oven to 325 degrees. Fix your broccoli and rice. While it is being prepared, mix chicken, can of cream of chicken, and mayo(at this point I always throw in some onions, salt and pepper) in a large mixing bowl. Once the broccoli and rice is ready pour them in and mix it all together and put it into a casserole dish. Bake for about 20 minutes. At this point I take it out and put a sleeve of crushed Ritz crackers on top and pour about 1/4 cup of melted butter over the top and then sprinkle with shredded cheese and then return it to the oven for about 10 minutes. It is so delicious and it makes a TON! I normally make this on a Saturday night and we eat for dinner and then again for lunch on Sunday. Sometimes, there is still enough for me and my husband to make a plate for lunch on Monday. I normally serve it with green beans, mac and cheese, and mashed potatoes. My family loves it. As a matter of fact, this is what we are having tonight! Wink

This is a great idea. I get so sick and tired of cooking the same things all the time. I am definately going to take advantage of these recipes and put them to good use.
Crock pot recipe: Start with tenderloin or Boston Butt (or any version of boneless pork you prefer) rubbed with garlic and cumin. Add a little lime juice, a can of RoTel, a drop of spicy mustard, and about 4 cans of pinto or black beans (mixed if you prefer). Cook on low for several hours. Sometimes I marinate the pork overnight in some beer, but with slow cooking, that isn't really necessary.
Chicken and Rice - VERY easy

Casserole Dish - Line with plenty of foil
Boneless Skinless Chicken Breast
Thyme
Chopped Onions
Black Pepper
2 Cream of (pick one) Soup - I like Mushroom
(Cooked) Uncle Ben's Boil-In-The-Bag Rice

* Pour one can soup in bottom of casserole dish.
* Sprinkle spices and half your onions in bottom.
* Place chicken on top.
* Pour & sprinkle remaining ingredients over top.
* Wrap tightly & bake at 350 for an hour - cook slower for more tender chicken if time allows.
* Place chicken on pile of rice and pour gravy from pan over it all.

Pound the heck out of chicken breast to break down fibers(per Trader). Saute them until juices run clear. Cook some frozen tortellini and pour over any Alfredo sauce. Sprinkle with Parmesan cheese. Add a green salad and garlic bread. Move over, Olive Garden. You can use crumbs on the chicken to add a crusty flavor. Also play with your sauce per garlic, etc. My dinner tonight - 30 minutes or less!
