I'm looking for a recipe for a corn dip that I had over the holidays. It had corn, maybe shoepeg?, shredded cheese, sour cream or mayo, maybe onions?, maybe pimentos? It was great, with crackers or chips. I could kick myself for not getting the recipe. I've had it before at other get togethers, so I know it's not some obscure recipe. Anybody know how to make it? I would be your best friend forever!!! Smiler

Corn Dip
1 small can White Shoepeg Corn, drained (use this, not regular corn-- it makes a difference!)
1 small can Diced Ortega Green Chiles, Mild or Medium (to your taste)
1 cup shredded Monterey Jack
1 cup shredded Sharp Cheddar Cheese
1 small bunch green onions, chopped (appx. 4 to 5)
1 cup sour cream
1 cup mayonnaise
Stir all ingredients together and chill overnight so the flavors have a chance to blend. Serve with corn chips.

This is a great easy recipe--my mom does this for her parties at work.

That is the BEST Dip, hippygirl! My mom also makes this for holiday get-2-gethers, and it's always a hit!

I made the dips and they were great!! But a word of warning: the recipe from RolyPolyFishHeads was incredible but it made tons!!! I could feed an army of snack-hungry teenagers with it. I didn't pay attention to the amounts until I had it 1/2 mixed together. Do you think it would freeze well? We've been snacking on it since Saturday, but I don't want to induce Corn-Dip burn out. Big Grin
What type of chip or cracker goes with this? It sounds good!
