For your St. Patrick's leftover corned beef
Reuben Casserole
16 0z well drained sour kraut
(I like the jar kind)
1/2 lb cooked thinly sliced corned beef
2 cups shredded swiss cheese
1/2 cup thousand island dressing or russian
(I use a spicy home made version)
2 large thinly sliced tomatoes
2 tablespoons butter
1/2 cup melted butter
5-6 slices rye bread cut into cubes
1/4 teaspoon carraway seeds
Arrange kraut in bottom of a sprayed 9" x 13" baking dish. Top evenly with corned beef, then shredded cheese, dressing and tomatoes. Dot with unmelted butter.
Toss bread cubes with melted butter and caraway seeds, then spread cubes on top of casserole. Bake at 350* @ 45 minutes.
