Afterburners
Makes 6 appetizer servings

Ingredients
12 unpeeled medium-size fresh shrimp
12 jalapeño peppers
6 bacon slices, halved lengthwise
Preparation

Peel shrimp, and devein, if desired.

Cut a slit in each jalapeño pepper; remove seeds and membranes. Carefully place one shrimp in cavity of each pepper.

Wrap each pepper with 1 bacon piece, and secure with a wooden pick. Place in a jellyroll pan.

Broil 5 1/2 inches from heat 6 to 7 minutes on each side, or until bacon is cooked. Serve warm.



Lemon Chicken Tenders
Makes 4 servings

Ingredients
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
3 large skinned and boned chicken breast halves, cut into 2-inch strips
2 large eggs, lightly beaten
1 cup Italian-seasoned breadcrumbs
1/2 cup sugar
1/2 cup lemon juice
1 1/4 to 1 1/2 teaspoons curry powder
Preparation

Combine first 3 ingredients; sprinkle on chicken strips.

Dip chicken pieces in egg, and dredge in breadcrumbs. Arrange chicken in a single layer in an aluminum foil-lined 15- x 10-inch jellyroll pan.

Bake at 400° for 15 minutes, turning chicken once.

Cook sugar, lemon juice, and curry powder in a small saucepan for 5 minutes over medium-low heat, stirring till sugar dissolves. Drizzle over chicken; bake 5 more minutes.
#1 -maybe fry a lb of hamburger meat,and a lb of sauage hot or mild, drain , mix in a crock pot with melted Cheese, makes a great dip with chips. #2 -If you have a smoker carcoal grill or regular grill ,season with Tony Chachere's ,smoke chicken wings on indirect heat 200 to 225 , very good with ranch dressing. Lowes has these neat little racks that holds the Wings or Drumlets . at same time of smoking wings do a Beer Can Chicken , Lowes or WallMart has racks to hold the beer can and chicken. of course my home made Salsa and chips, and Cajun Green beans to go in the Bloodly Marys Smiler # 4 Chicken Stews or Chile are allways good ... We usually do the big pot of chili, fritos, shredded cheese, sour cream, etc…- or taco soup with tortilla chips. I like doing the big one pot type meals, keeping the pot on low so that if someone wants more during the 3rd and 4th Q, it’ll be warm. You can also do a sub sandwich bar.

Our kids likes popcorn chicken with dips and a vegetable tray. I take chicken breast strips (marinated in buttermilk over night) and cut them in bit size pieces. I’ve used crushed Honey Bunches of Oats as a breading, which is their favorite. I’ve even used crushed Lays sour cream and onion chips as the breading. Just use the regular flour/egg dredging and bake them. Serve with bbq sauce, honey mustard, or ranch.

We are all tired of burgers and dogs too. We’ve done the beer and cheese Johnsonville brats with slaw (shredded cabbage, mayonnaise, pepper) or kraut. We’ve taken chicken leg and thigh quarters, wrapped them in bacon w/toothpick, and soaked them in Dale’s or Moore’s (has less sodium) then grilled them. We’ve put a bag of frozen vegetables (carrots, cauliflower, potatoes, and broccoli) and seasoned them with parmesan cheese and pepper and grilled in an aluminum foil pouch.

We’ve done a complete appetizer spread. We get about two pounds of the Cajun steamed shrimp. We’ll make a taco layers dip (refried beans, salsa, sour cream, cheese..). We’ll do chicken wings with ranch or bleu cheese. Broccoli salad. Sausage balls. Bacon wiener wraps. Meatballs (those frozen ones) with bbq sauce. We make pickle wraps- you take a piece of thin lunch meat (corned beef, roast beef or favorite) spread a little bit of softened cream cheese, put a pickle spear in the middle and roll it up. Sound gross, but good. Chex mix, Ruffles with the hidden valley ranch packet mixed with sour cream. A homemade trail mix…..
