At work I'm about to have a contractor coming in from NC for his annual visit, and he likes to try the barbecue in every city he goes to.
Which place should I recommend for him to try, after I break the news that he won't be going to Singleton's again this year?

If he don't have to have it served with all the fixings I would say Smoking on the Boulevard. If that is not acceptable then go to Brooks off of Second street in Muscle Shoals.
If you want mediocre barbecue with a decent atmosphere then go to FloBama downtown Florence.
If he wants to see what is all available, then I would suggest going to all three.

For shredded BBQ, Southern Barbecue is hard to beat.
Rick's is also good.
Sam's Sports Grill or whatever it is called has great ribs. And while I don't really care for them, Bunyan's is probably the best representative of local barbecue. And then there is Rick's.

I was going to suggest Uncle Gus's.
Take out, I prefer OK Corral in Muscle Shoals or Whitts in either Muscle Shoals or Rogersville. Dine in, I usually visit Ricks or Lawlers in Athens at I-65 and Hwhy 72.

The Shoals has such an abundance of good BBQ places that everyone here knows what good BBQ is and anyone trying to sell second-rate BBQ is doomed to fail.

Since Visitor from NC, he/she may be used to vinegar sauced BBQ, these above will be similar. Slaw will be different for your visitor. Sauce/spray added to meat seems to be Vinegar based. Some of Carolina's use mustard/vinegar sauce to bast meat while cooking. No Mustard based BBQ used in this area that I know of.
As far as Kansas City goes, Not a big fan of KC Pork BBQ, they use a lot of Oak to smoke pork and local favorite sauce is far too sweet. I might as well use a bottle of KC Master piece. Too much Tomato based Thickness & Sweetness for my liking. But none the less, it's still Good Meat Flavor & texture! That's why its so much fun trying BBQ in different parts of the Country. They are all a little bit different. In my travels across the country, the South East has the best BBQ in the Country, Minus Dobbs in Dothan,Al. Ranging from the Carolina's to Texas an all points in between. The Farther north you go, the more of an attempt, to make Good BBQ. North East, Good BBQ is Non-Existence.
Regional BBQ is Just that, "Regional"!!! Just Like Whitts, They add a Pickle slice to their BBQ Sandwich and I believe that presentation only exist in North Alabama, no where else.

Best mustard-based BBQ sauce in Alabama--and maybe anywhere, is the house sauce (also available here and there as a bottled product) of Twix 'n Tween BBQ in Centreville. Good news; You can make your own with one of the recipes found here:

You might wish to reduce quantities and cook up less than the mass quantity described in the first recipe. Not guaranteeing these bootleg recipes will achieve the "real thing," but often those who concoct them get pretty darn close.
Smoking on the Boulevard is great BBQ but like said it's take away. If it doesn't have to be local and you don't mind a 30 minute drive or so take them to Big Bob Gibson's and you can show them all the trophies from the awards they have won. For locally I'd recommend **** Howell's Barbeque Pit at 1350 N. Pine St over near 7-Points. Another place that I hear many folks like is "Pops BBQ" 3477 Co Rd 61 off of Old Jackson Hwy in St. Florian.
