Here is one of my favorite recipes (and easiest!).

White Chicken Chili
2 Roasted Chickens (like you buy in the deli precooked)
1 bag of frozen Seasoning Blend Veggies (onions, celery, etc)
2 small cans chopped Green Chilis
3 Cans Northern Beans
1 can Chili Style tomatoes
2 tsp cumin
2 tsp oregano
Garlic Salt/Powder, Salt, and Pepper to taste
Enough Chicken broth to give it the consistency you want.

Shred up chicken off bones and mix with all other ingredients in crock pot until heated thru. Top with Colby and Monterey Jack when serving. (if you want it hotter add Rotel tomatoes and chili powder).


If you want to actually do some chopping, etc, you can use this recipe:

White Chicken Chili
10 Chicken Breasts, cooked and shredded
6 Cups chicken broth
1 cup chopped onion
4 oz can chopped jalapeno peppers
5 cans Great Northern Beans
1 Can Rotel tomatoes
2 tsp cumin
1/4 tsp cloves
1/4 tsp red pepper
2 tsp oregano

Saute onion & jalapeno peppers in a little oil or butter until onion is soft, add broth and meat. Bring to a low simmer and add other ingredients and seasonings. Simmer until warmed thru and top with monterey cheese.
